APRICOT JAM TIME

What a haul from the market today! Sanette's chicken pies and a big bunch of bay leaves put out for the taking by Mary. Eggs, green beans, potatoes, carrots and a big bunch of red onions from Jill and Wendy's large garden.
I really love knowing the people who grow the veggies that I buy at the market.
The first of the season's apricots were for sale at Richard's stand. I bought enough to make lots of jam. Have already given away a bottle to unexpected and welcome visitors whom we have not seen for a long time. I cannot seem make enough apricot jam as it is so popular.
When we first arrived in Prince Albert I was told by an old inhabitant that you were not a true Prince Alberter if you did not make your own apricot jam.
I have two recipes. In the first one you boil the apricots and a few kernels in a little orange juice, not forgetting the zest. Then you add the sugar. In the traditional recipe you layer the fruit in the sugar overnight and make the jam the next day. In this recipe the fruit is firmer. Both are delicious.
