Cherry and coconut

Golden Labrador yesterday, golden cake today.

Now that I've got some proper glace cherries - as opposed to the little jars of cherries in heavy syrup that they sell here for baking - I've made Cherry and Coconut cake. It's my Mum's recipe and is delicious, although I had to substitute honey for golden syrup as we can't find that here. Sorry but it's not in metric.

11oz plain flour
3 level tspns baking powder
6oz margarine
6oz soft brown sugar
6oz glace cherries, halved
2oz desiccated coconut
2 level tblspns golden syrup
1 rounded tblspn marmalade
3 medium eggs

1) Sift flour and baking powder into a bowl. Rub in margarine, stir in sugar, cherries and coconut.
2) Put syrup, eggs and marmalade in a bowl, beat well, add to dry mixture and mix well.
3) Place into tin (7" square) and bake for 2 hours at 300 deg. F

Edit: The other night I had a weird dream about the dressing gown in my year-ago blip. It was in a charity shop and was falling to bits... a little unsettling.
