Turkey vegetable soup
Another use for leftover turkey. I had about three quarts of turkey stock. I added the bones and skin and some water and cooked it down until the stock was very concentrated. Took out the bones and cleaned of the bits of meat and returned it to the pot. I added mushrooms, onions, garlic, carrots, celery, fennel and potatoes and more of the cooked turkey. Cooked it until the vegetables were very tender, then added couscous and cooked for ten minutes more. It was a very large pot of soup. At the very end I stirred in a cup of heavy cream. It's amazing how much difference the cream makes. It is not a cream soup, but still a broth, but it gives it a very nice bit of richness and a bit of sweetness that is delicious.
