Wild Sockeye Salmon

It was a real treat a few weeks ago to discover that Costco had wild sockeye salmon in stock for $8/pound. It's pretty rare that the wild salmon makes it this far east. Sure, you can pay $20/pound for it at Whole Foods...

Anyway, stocked up on some and froze it appropriately. First you put the salmon in the freezer for a couple days. Then you need to glaze it, to keep it from getting freezer burned. Glaze by quickly dipping the frozen salmon in a bath of water and karo syrup, or water and brown sugar. Not too much of the Karo or sugar, though. Then refreeze. The salmon will be protected from freezer burn, and you'll be able to enjoy it over the next few months.

Why is this important? Because when Costco does get the wild salmon in, they only have it for a week or so. Maybe it finds its way to another store, maybe not.

And, BTW, this is the first time in a LONG time that I've actually posted a blip on the day I took it. I've been usually letting them queue up for a week and then back-blipping to death!
