Not what it seems!

No eggs!

This fridge tart/cottage cheese tart is easy to prepare and yields generously.

You will need:

1 packet Tennis biscuits, 200gr
1 packet of jelly/jello, 80gr, (I used lemon flavor)
1 Cup of boiling water (250ml)
1 Cup of fresh cream (250ml)
1 Tub of plain unflavored cottage cheese (250gr)
1 tin of condensed milk, 385gr
50ml lemon juice( about 2 tablespoonsful)
1 teaspoonful of gelatine powder
One medium sized can of tinned fruit, 410gr, (I used apricot halves)

Dissolve the jelly powder and 1 teaspoon of gelatine in the cup of boiling water.
Allow to cool, put in fridge and allow to set to only the consistency of thick cream. If it sets too much, put it in the microwave for a few seconds.

Line a large, flat (pyrex, or other) dish with the tennis biscuits: cut biscuits to desired size and also arrange halves around the sides of the dish.

Beat the cream till thick, be careful not to make butter.

Mix the cottage cheese together with the condensed milk, and add the cream, to this mixture. Mix slightly.
Add jelly and lemon juice to cream mixture and mix all together. Do not be alarmed if the mixture seems runny, it will soon set.
Pour mixture into biscuit lined dish and allow to cool in the fridge.

Drain the tinned fruit, and pour the drained juice into a small saucepan. The volume of the juice should be about a cupful (250ml). If less, add any fruit juice to make up the volume. I once added just water.

Dissolve/mix 15ml (3 teaspoonsful) custard powder, or maizena powder into a little of the juice, while heating the rest to boiling point. Add the powder mix to the boiling juice, stirring constantly to get a smooth, runny sauce. The moment the sauce becomes clear, it is cooked.
Allow to cool.

Take the dish from the fridge and arrange the tinned fruit on top of the cooled surface. Pour the cooled juice over the fruit and allow to cool in the fridge, preferably overnight.

The apricots and its juice has a tartness that balances the sweetness of the mixture.
The type of tinned fruit used, as well as the jelly flavor, is for your individual taste and preference.

This can be served at teatime, or as a dessert.
