My saviour

If I can't get to sleep and its too late to take a nibble of a Dormadina, I usually get up and make myself a cup of chocolate, read a book for an hour then back to bed and finally get to sleep. This happened last night.

Sarah, recipe for lemon freeze

250 gr crushed cornflakes )
250 gr castor sugar ) mix together
250 gr melted butter )

4 eggs, separated
Large can condensed milk, NOT evap
10 fluid oz double cream
Juice and rind of 4 lemons
25 gr Castor sugar

Line two loaf tins with strips of foil, leaving plenty of overhang on the short edges. I seem to recollect 2lb loaf tins. Divide the base mixture between the two tins. In a large bowl add the condensed milk and cream to the egg yolks and blend well. Add the strained lemon juice and rind, stir well until the mixture thickens. Beat the egg whites until stiff, add the castor sugar and beat until glossy. Fold this into the lemon mixture. Pour into the tins and freeeze. Once frozen you can lift it out from the tins, slice and lay greaseproof paper between each slice and pop back in the freezer, you then have an easy pud.
