Chicken with Orange
A day in the kitchen. Still not feeling too good, but I haven't lost my appetite.
A big pot of carrot, courgette and coriander soup to last us through the week, and then had a go at another chicken marinade.
I scored the chicken, spread honey on each leg, then orange juice and sesame oil followed by salt and pepper, chopped garlic and ginger, crushed cardamom seeds, ground cloves and tumeric. Finally I pressed on the grated orange zest and sprinkled some sesame seeds The trick is to put the liquids over the meat first, otherwise they wash off the various spices.
It sat for about six hours covered in foil, then oven for 75 mins at 190C, and 15 mins without the foil, to crisp the top. Served with rice and green beans. Delicious.
