Apples and cake

I made this apple cake for my mother's 19th wedding anniversary tomorrow. She had been a widow for over 26 years when she remarried in her mid-sixties. She now has severe dementia but is looked after by her husband in the most wonderful way. He would say he loses his temper with her frequently, but even his sharpness of tongue stimulates her to some response and his patience far outweighs his irritation. The sad thing is that she has no appreciation of his loving care and will never be able to show her gratitude. This cake is really to say a small thank you to him.
