NZ Ginger Crunch

After the success of my friands a couple of weeks ago I decided to have a go at Ginger Crunch, another tray bake that we really enjoyed in New Zealand. It's basically a shortbread flavoured with ginger with a ginger icing as well.

My favourite one in Wellington was at Scorching Bay, followed closely by the Roxy art-deco cafe (maybe you have tried their bakes Panda?) Well, now this one is my favourite. The recipe is a NZ one...

Robin agrees it is delicious which is lucky as I got 18 pieces out of the bake so we will be eating it all week!
