Cooked Gigantes Beans
They look delicious. This time R has used
225gms Gigantes beans (soaked & cooked for 40 mins or so) with the following vegs: 3 Red & 1 white onion, 1 sweet potato, 1 parsnip, 2carrots, 1pack spinach, 1 red pepper, 500 ml passata, 200 ml olive oil, 3 cloves garlic, 1green chilli, a&up, oregano, slosh white wine & 200 gms feta. All chopped & into large pan & baked roughly 70 mind turning a few times.
It's not exact at all & you can use the Mediterranean vegs for a change with lots of courgettes, au beefiness & more peppers and tomatoes. We get the beans from a Greek chap in Torquay but at a pinch you can use large butter beans.
