lunch planning
Finally got my act together to prepare meals for myself at work. Canteen at work has no concessions for people with eating disorders or in my case diabetes. More often than not I grab what I can and overload on the wrong sorts of food to fill me up when I get really hungry. So, shopping in the Co-op this weekend discovered their bags of fresh rice noodles, bought a load! Got a load of vegetables that I like from the local greengrocer and today put together 4 pots of loveliness for my lunches.
From the bottom of the pot, up there is in layers
Beetroot
stirfried veg including shallots, garlic, asparagus, mushrooms and peppers
poached salmon
rice noodles
Can't wait to try one!
