Baked Trout wrapped in Parma ham with Watercress Sauce
More 'seat of your pants' cooking. (the phrase was coined by an old head chef of mine to describe cooking with out recipes and with a lot of improvising)
I've made variations of this before so I've more or less got the process down.
Personally I'd prefer to use lightly smoked fish but my Dad's not a fan.
I cheated slightly and used a ready made Sauce simply because it made the logistics simpler.
