Kosher Milk

At one of my visits today I met Lipa who is the chap in the picture. This farm produces milk that is bottled for the Manchester Jewish community.

Lipa's job is to arrive before milking time and check that the hygiene and cleanliness of the milking system is up to his standard, he then stays until the milk is collected for transportation to the bottling plant.

You can just about see the tape which seals the tap at the bottom of the tank and overnight the top of the tank is also sealed to prevent anyone else interfering with the contents.
