Green spaghetti

I was looking forward to this all day. I made this last night and got so distracted doing it I burnt last nights dinner!

Soooo 1.5 baby leeks, baby broccoli, 1 red pepper, 150g quorn mince, 1 tin of tomatoes, two red chilli's, 1 tub button mushrooms, a handful of fresh basil, a squirt of tomato purée, a squeeze of marmite and seasoning. 2 julienned courgettes

Cook off the mince in an inch of water adding the marmite and tom purée. Add everything else other than courgettes. simmer for an hour then leave overnight.

Next day
Blanch the courgettes - reheat sauce then 'garnish' with cottage cheese

Was lovely, my tummy is happy, warm and full
