Saka Saka

This is a classic Malian dish, called Saka Saka. It is made by cooking the leaves of sweet potatoes in palm oil, an orange coloured oil used here. A few herbs are added, then the leaf/oil mixture is used to slowly cook a meat - in this case it was mutton. It is then served with rice. Eaten on the bank of the River Niger; it was delicious.
