I had a productive day today. Booked the campervan that Mother and I are going to take through the outback to Alice Springs. Also booked the fights out of Alice Springs back to Brisbane. They cost an absolute bomb but at least they are now booked. I had a chat with Morag, she had just got back from NY.
Went for to the dog beach with Duncan. We walked around the other side of the dog beach which was really pretty.
I made puff pastry for tonight and made a pumpkin, feta, pepper, caramelised onion, and tomato tart. Also made a beetroot, cucumber, grape, walnut and feta couscous. Was cool because the couscous was pink as I put beetroot juice in it. Made a dressing for the tart by heating up maple syrup and balsamic vinegar.
