Olive mill

This new mill was opened in the village last week by three local olive growers. We visited today and tasted the oil, which has a wonderful strong flavour. Unfortunately they're not registered to sell oil yet, so we'll have to wait till next year. They're doing good business pressing olives brought in by growers from all over the area.

This machine mixes the olive pulp before it goes to the centrifuge which extracts oil. The pulp looks a bit like tapenade and the whole mill smelt wonderfully of olives and olive oil.
