I don't make corned beef and cabbage very often, but we bought the beef on our recent shopping trip, and I prepared it today. The instructions said it should simmer for 50 minutes for each pound of the roast, so I started it in plenty of time to be ready when Mr M came home from work. I smelled it all afternoon (delicious). And I thought the color was lovely. When I served it, after smelling the wonderful flavor all day, I thought it was delicious. Mr M prefers it doused in vinegar. Go figure!

We started the day out with a temperature just above zero, but it got milder as the day wore on. Still 20 degrees higher this evening. Not sure what tomorrow will bring.
