Blackened Salmon, Chorizo & Bean Salad
1 tin flageolet beans
1 piece blackened salmon
3 inches chorizo sausage
1 bunch coriander
1 bunch mint
3 stalks of spring onion
4 stalks of celery
- Or equivalent crunchy vegetables
Dressing
1 garlic clove crushed
1/2 chilli chopped
1 lime juiced
1 tsp honey
Salt & Pepper to taste
Rinse the beans. Chop vegetables and flake the salmon. Add all ingredients except chorizo to a mixing bowl. Fry up chorizo in its own oil. When ready pour chorizo and the oil into the mix.
Pour over the dressing and mix well.
Tastes much better if left to marinade in the fridge overnight.
