Mexican Chipotle-Chocolate Bites
Another adventure with mexican chocolate this week. Mike and I have very different ideas of the goodness of cinnamon. He loves it a bit too much if you ask me :P. Either way, here are the scores:

The consistency of these cookies was one of the best we've made so far. The shortening really makes a difference. Sweet, spicy, and cinnamon-y these cookies are full of flavor.
Our Advice: Because Mexican chocolate is so difficult to find, the best way to substitute for it is to find cinnamon chips and mix them with semi-sweet chocolate morsels. Also, be careful when spreading the filling. It becomes flat very easily, so don't be afraid to re-whip it.
