Carrot & Walnut

My in-laws kindly gave me one of those fancy lakeland mini sandwich cake tins as a present on my birthday and I've been trying out all sorts of different recipes.

Today's carrot & walnut cakes with cream cheese icing were pretty fine*, even if I do say so myself. And even better the boys weren't keen so all the more for me :)




* fine as in the Aberdonian sense of the word, what I mean is they were goooood.
