Don Juan's finca organica

I " helped" pick radishes at Don Juan's organic farm for our lunch. Don Juan is a math teacher who started an organic farm for educational purposes. The farm grows all the food for their restraurant. They also have a cow for milk, pigs, chickens, and fish ponds. This all on two or three acres. The meal was delicious. A salad bar, beans, fried plantains, fried fish, and homemade ice cream for dessert.
In the afternoon we visited a cocoa plantation where we participated in making chocolate the traditional way from whole beans to the finished product. We got to add our own flavorings : vanilla, black pepper, hot pepper, ground corn, cardamom, nutmeg, cumin, ginger, hibiscus, almond, orange, coconut, cocoa nibs, cinnamon. I tasted so many different flavorings, I got high on chocolate! Best I've ever had. Had a hard time getting to sleep that night but it was worth it!
