Spicy Beans and Cool Cucumbers
Spicy Beans
1 onion
2 tsp chilli powder
2 tsp paprika
1 tbsp tomato sauce
1/2 lemon juiced
1 tsp coriander
2 tsp cumin seed
1 tin of barlottie beans
Toast cumin seed on a dry frying pan until aromatic. Add to the other spices and mix in tomato sauce. Chop onions finely. The finer the better. Mix through sauce thoroughly. Put in the fridge to marinade overnight.
Add beans and mix before serving. Serve with Cool Cucumbers.
Cool Cucumbers
1/2 a cucumber
2 tbsp greek yoghurt
pinch of salt
1/3 pkt mint
1/3 pkt parsley
This does not keep well, so I always only make as much as I need and prepare just before serving.
Chop cucumber finely. Add yoghurt, a pinch of salt, and mix. Top with generous helping of finely chopped herbs.
