Spaghetti bolignese for tea

"1982 Chamber of Commerce Bologna & Accademia Italiana della Cucina (the Italian Academy of Cooking) guidelines"

2 tbsp olive oil (check)
6 rashers of streaky 'pancetta' bacon, chopped (no)
2 large onions, chopped (check)
3 garlic cloves, crushed (no)
2 carrots, chopped (check)
Stick of celery (no - mushrooms & peppers)
1kg/2¼lb lean minced beef (check)
2 large glasses of red wine (no - Worcestershire sauce)
2x400g cans chopped tomatoes (check)
2 fresh or dried bay leaves (no)
salt and freshly ground black pepper (check)
800g-1kg/1¾-2¼lb dried tagliatelle (no - spaghetti)
freshly grated parmesan cheese, to serve (no - Red Leicester)

Doubt I would have passed their taste tests but I enjoyed it.
