smokey aubergine curry

on a cold winter night when the forecast is for around a foot of snow to fall over night, there is something comforting about toasting half an aubergine on a camping stove... its for dinner - smokey aubergine curry - and the other half is roasting in the oven as i type.

we don't have a gas hob here. its a shame. i miss the one we put into the old house before moving... :-(
