Banh Xeo

Banh Xeo (my parents called it Vietnamese pizza---holy poop it was delicious) before a good 13hour car ride to New York!
(According to Wikipedia they "are Vietnamese savoury fried pancakes made of rice flour, water, turmeric powder, stuffed with slivers of fatty pork, shrimp, diced green onion, and bean sprouts.")

The struggle to sleep initially was real.. so I could keep myself and Vivian awake as she drove the second half. Probably 1hour of sleep total :( it was a butt-hurting car ride.

P.S the rest stops in Ohio are so much nicer than in Pittsburgh
