Fireweed Jelly!

KMS wanted to make fireweed jelly so very badly to enter in the state fair later this summer. Well, she stripped the flowers, forgetting that her schedule was a bit full this week with two theater camps and one performance. So, I used the blossoms to make the jelly this time. She'll have to strip more next week. As the blossoms open up the stem, the jelly becomes more and more mellow tasting. In early summer, fireweed jelly is rather tart, and in late summer, the jelly is mellower, very much like honey. This is right in between, just enough kick to catch your tastebuds! The pink in the background is fireweed, by the way. We have lots of it in the yard this year.
