Eggplant heaven

Eggplant pizza, sautéed eggplant with veggies, grilled eggplant, and some turkey sausage! Healthy dinner :) today was a great day! First day of school for some sweet track four kiddos, awesome run in the woods with dan and the meatballs, a quick beer with our friend stacy, then dinner and drinks on our patio. Love days like this :)
