Giant vegetables

So I have come home from my holiday to find giant vegetables! These courgettes look much more like marrows & I need help!

I usually sauté or roast my tender courgettes, these don't look much use to me, except for maybe as an entry to the 'Most Enormous Vegetable' competition! I imagine the flesh will be watery & the skin will be tough so what can I do??

Does anyone have a recipe that would make the most of these gigantic specimens? Any suggestions & recipes welcomed (vegetarian adaptable please)
