Hot Smoked Trout

Took the No.36 out to Dean Village this morning and walked back along the Water of Leith. This is one of my favourite walks, 6km in all with a stop off at the Stockbridge Sunday Market for some supplies for lunch, in my case a wild venison and chorizo pie.

The term Hot smoked is fin, but Cold Smoked always puzzles me, surely you have to have heat to get smoke.
