Cider bottles

I was at the cider museum in Hereford today. It's a very good, well-paced, absorbing presentation of the history and techniques of cider-making with exhibits dating from early times and a great account of the challenges of industrialising the process. This picture shows rows of cider bottles settling during the champagne cider-making process. It's about creating a clear cider, which involves settling the yeast at the neck of the bottle, and then removing it using a process called dégorgement (borrowed from champagne- and cava-making) before re-corking it.
