The Hangi

....is a traditional maori form of cooking, where food is cooked over superheated stones underground, the food has a great flavour and is steamed to perfection.

Tonight we celebrated friend Vicki's 60th birthday at their home in Rotorua. Husband and son catered for the meal by cooking the pork, chicken, kumara and pumpkin in a hangi. They fire was lit at midday to heat the stones, and by mid afternoon they were taken from the fire and placed in a hole in the ground, the metal basket containing the wrapped food was placed on top then everything was covered by the soil and left to cook until 6.30.
Ed and Sam were on hand to dig away the soil and lift out the basket of food....which was cooked to perfection. A fabulous meal for the guests.

...and thanks everyone for all your kind words and stars and hearts for yesterday's magnolias which spent the day in the spotlight...thrilled to bits.
