Phil's Harvest

Phil is delighted with his vegetable garden and proudly delivers produce every morning. Perhaps more than 2 people need. Today I made Tomato Compote.

Cut a kilo of tomatoes in half and mix with 100 mls 0f olive oil, 2 cloves of chopped garlic, thyme, and little balsamic vinegar and teaspoon of icing sugar. Slow roast for two and a half hours in the oven. Put into sterilized jars with lids and put the jars into a large pan of boiling water - boil for 45 mins. The result is a delicious mixture which will keep for up to 6 months.
