..to our utterly indispensable local Turkish shops which stay open pretty much right through the night. I think they shut for an hour between 4 and 5a.m. but otherwise you can get coriander, floor cleaner or pomegranate molasses at 3 in the morning. You'd be surprised.

The guys who run these shops work soooo hard - I'm in complete awe of their work ethic. They deal with all kinds of crap from some of their customers but take it on the chin and always have a smile for the next customer. Unless they're kids in which case it's a lollipop.
