Omelette with Baked Mushrooms
This is what I had for breakfast this morning and boy, was it filling. I've bought 'I Quit Sugar' by Sarah Wilson and I'm trying out a few of her recipe alternatives to a sugary cereal breakfast. The only difference is is that I used mixed herbs in the omelette, I didn't have any thyme to put on the baked mushrooms (I used chestnut mushrooms which are lovely) and I used medium cheddar instead of mascarpone. She suggested serving it with a slice of wholegrain bread - I didn't have any so went without. I think it worked our pretty well! Taken using aperture priority mode in the morning light.
