Pancake Day

Today was a good day. After lectures we had a few college folk over to make pancakes. I've never really baked before but given my Valentine's effort I thought I'd see if I was on to some kind of lucky baking streak.

Turns out I was! I wasn't entirely sure of the ingredients or quantites and soon discovered my flat was lacking in any kind of measuring utensils. So I did what all good bakers do - I just gussed and threw it all in, including white chocolate chips and a lot of lemon juice. My recipe happened to be fabulous and they tasted so good. Topped off with chocolate-cream from a can and some sugar they were the perfect end to a good day.
