The Great Bonfire Night Parkin Disaster

Day 264 of 365. A group of us from work are doing a half marathon for charity next Sunday in Windsor. I only realised a couple of weeks ago that it has a reputation for being "notoriously" hilly - oh dear! As reward for those who've sponsored us we've decided to bake cakes and I decided to make my Bonfire Night Parkin (basically a kind of oaty gingerbread). I've made it plenty of times before and it's never failed me until today - as soon as I took it out the oven it sank in the middle (a lot). It looks so sad (still tastes alright but looks tragic) I've decided to have another go next week. Fingers crossed it will work out better the next time!
