Hedgehog Fungi
Went to a local wood with the dog this morning which she enjoyed, managing to swim in all three ponds we passed. This hedgehog fungi (Hydnum repandum) is one of the few wild species I eat. It does have to be cooked in the right way though. It is called a hedgehog fungi as it does not have gills but spines under the cap.
