Belly pork with bacon textures

Been playing with a new belly pork dish for cadre months now, still not happy tho! This is our

24 hour slow cooked belly of Gloucester spot pork, soaked in sweet cider, with bacon jam, crisp and oil, sweet potato mash and roast, together with buttered spinach and red wine jus

Great night at work and it went down well, sales are getting better but it's gonna take time.

Had some interesting chats today which reminds me it does not do well to dwell on things in our past but remember the good times instead.
