The Bread

I am pleased with the result and it was easy to make. Kind blip friends have asked me to post the recipe which comes from elanaspantry.com

1.5 cup blanched almond flour (I could only find raw)
.75 cup arrowroot powder
.25cup golden flax meal (I blitzed flaxseed as could not find meal)
.5 teaspoon Celtic (?) sea salt
.5 teaspoon baking soda
4 eggs
1 teaspoon agave nectar or honey
1 teaspoon Apple cider vinegar

In a medium bowl combine flour, arrowroot, flax meal, salt and baking soda.
In a larger bowl blend eggs for 3 - 5 minutes until frothy.
Stir agave or honey into eggs,
Mix dry ingredients into wet.
Scoop batter into a well greased 7.5" x 3.5" magic line loaf tin (my ordinary tin of slight different measurements worked)
Bake at 350F/180C for 30 - 35 minutes until a toothpick inserted into the centre of the loaf comes out clean.
Cool and serve.

Makes one medium sized loaf.

NB. My friend warned me that it is an expensive loaf. It is. 250g of almond flour, for a start, is over £5. But I wanted to try it 'properly' for the first time. I shall be experimenting with more 'normal' gf flours next time!!
