Save the pumpkins!

Halloween approaches and the shops are full of pumpkins. But apparently, unlike the Americans, us Brits throw away the middle once we've scooped it out rather than cooking it. Or at least that's what an article in the Independent informed me today based on research by the Pumpkin Rescue campaign (whatever next?)
Mind you, the recipe for pumpkin soup made my mouth water and is a simple if obvious use for the scoopings!
So I couldn't resist taking this pic as I passed a shop this afternoon.
