Mango Crunch Cookies

The boy loves to scoop flour and sugar into a bowl so baking is becoming quite a popular rainy day activity. Unfortunately he is also rather scared of the electric beaters so he hid in his room until I'd finished that bit.

Thankfully for the waistband of my jeans, these were a present for a friend so didn't get to polish off too many of the batch but they were rather tasty so might make again if I can face chopping up the dried mango (which was a bit of an arduous battle)...
