Over the Horizon

Agroecology

The compost we make helps give nutrients back to the soil.

...and the sun shines bright here this time of the year in between intense afternoon rainstorms.

All this makes the maize grow tall and fat for us to eat.

...now spread it around with beans and peppers and you have a feast!

When all the kernels are swallowed feed the sheaths and stalks to the cuys in the shed out back.

...when they are fat enough roast them for a festival day, al horno.

The cuys turn the vegetable scraps into pellet sized pieces of manure that fertilize the flowers.

....whose pollen the bees turn into delicious honey.

Best on warm bread or stirred around in your horchata tea.

....all this in our own backyard in the city, Agroecologia Urbano.
