Vegan Root Pie "with cheese"

I attended a potluck dinner with friends and new acquaintances, at which this was the main dish, prepared by the host. He made two pies the same, except that some delicious cheese (unfamiliar to me) was melted over one (compromising the vegan status). I enjoyed it very much, and so did one or two not-so-strict vegans.
