Black Fig, Colston Bassett Stilton. Watercress, (not pictured) paired with Quinta Do Costa port
Salt Cod, Smoked Aubergine, Pine, top middle, paired with Torrontes
Dorset Snails, Garlic, Parsley, Potato Mouse, top right, paired with Pinot Gris
Northumberland Venison Loin, Parsnip, Quince, Wispy Kale, Cocoa Foam, middle left, paired with Primitvo di Manduna
Hand dived Scallop, Oak smoked Bacon, Puy Lentils, Wild Watercress, middle right, paired with Chardonney
Tim Oliver's Belted Galloway Beef a Fillet, Oxtail, Beetroot and Turnip, bottom left, paired with Syrah
And three puddings-
Hazelnut Sable, baked Custard, Poached Pears, middle bottom
Caramelised Apple, blackberry jelly, apple sorbet
Chocolate and yogurt truffle, salted pistachio, chocolate sorbet, bottom right
Paired with champagne Pol Roger
