A great start to the day

I think I've blipped this before but well worth sharing!

Best made this way (ingredients serve one person):
½ c rolled oats
1 egg (can just use white if preferred)
some water (maybe 1TBSP)
A little LSA if you have and want to use, maybe a tsp.

Mix together and leave overnight in the fridge. In the morning mash in one banana (or two thirds of one and cut the rest up to serve on the side)

Spray 3 circles of a non-stick cooking spray into a non-stick pan and then blob on the mix as three 'pikelets'. Push 3 or 4 frozen blueberries in at this stage if you like. Flip them as they cook. Watch this as they don't hold together well - use a wide fish slice and only turn the once. Serve with some yogurt and a small drizzle of maple syrup. Low calorie, sustaining and delicious!
