Omelette

I had had an extremely long day at work, not a very nice Friday and wanted to cook something easy, yet tasty, et voila! I made an omlette with courgiette, cherry tomatoes, onion, ruccola and parmesan. When I lived with Olga, she would make the most awesome omlettes and I always hoped that one day I would be able to emulate those, and I think I've finally managed it! Or it could just be that this one was seasoned perfectly and that's why it was so good ;)
