Mincemeat cake mix, to be exact, and it made for a very delicious cake too. That's not surprising, since this isn't any old cake mix but the work of a serious expert - Ursula Evans, who is renowned as a leading practitioner of the art of producing exceptionally fine fruit cakes - described as 'the best fruit cake I have ever tasted' by Mary Berry. Ursula is doing a book and by great good fortune I'm taking photos for it - every time I go to her cottage for a photoshoot I get fed delicious cake. Best job ever.
