Maguey Plant

Maguey plants grow for many years before this spectacular stalk (quiote) shoots to the sky, flowers bloom, and the plant dies. There are many varieties of maguey, and they are used for different purposes. The most well known use in Oaxaca is for making mezcal, the Oaxacan drink of choice. This type of maguey is not used for making mezcal.
