This is "kokoretsi". I copy from wikipedia: "a dish of the Balkans and Anatolia consisting mainly of lamb or goat intestines, including sweetbreads, hearts, lungs and/or kidneys".

One of the traditional specialties of this day in all around Greece. It has to be ready earlier than the lamb, as a ... starter.
